On November 26 (Tuesday), an auberge "Kanshukuen ESHIKOTO" will open in Eiheiji Temple, the head temple of the Soto sect of Zen Buddhism, to promote the food and culture of Fukui and other Hokuriku regions, with a focus on sake.
Dogen Zenji, the founder of Eiheiji Temple, regarded food as an important part of one's training, and in the Kamakura period (1185-1333), he wrote the "Tenzo Sermon," a treatise on the art of cooking. This philosophy and the techniques of vegetarian cooking became the foundation of "Japanese food," which was later registered as a UNESCO Intangible Cultural Heritage.
The perfect stay in this land, which can be called "the origin of Japan's food culture," will be offered by Kokuryu, a famous sake brewery with a 220-year history and produced from the high-quality underground water of the Kuzuryu River that flows in front of the restaurant, En, a talented Japanese restaurant that represents Fukui, and the up-and-coming Japanese Cuisine En and the up-and-coming French restaurant Cadre.
